Vietnamese chicken cabbage salad
With chicken, we can cook into many different dishes to enjoy. Besides, when the autumn comes, salad is always among the top favorite dishes of Vietnamese people. Vietnamese chicken salad is perfect. In this article, we will introduce on how to make Vietnamese chicken cabbage salad which is nutritious as it has both vegetables and chicken meat. Moreover, this is an economical dish because the main ingredients (chicken meat, cabbage, carrot,…) Are pretty cheap in Vietnam. Once you try, you will remember it forever with its fresh and tasty flavor.
Ingredients for chicken cabbage salad
– 2 large chicken thighs: 550 – 650 grams
– Cabbage: 250 grams
– 1 small carrot
– 1 small onion
– Laske leaves (in case laske leaves are unavailable, you can buy cilantro or mint)
– 1 lemon (or rice vinegar)
– Fish sauce, salt, sugar, ground black pepper, chilli (or chilli sauce)
– Fresh ginger
– Fried shallot and crushed fried peanut
How to make chicken cabbage salad
Rinse chicken thighs well and put into a pot. Wash ginger and crush it to put into the pot. Next, bring the pot to a boil on the gas stove. Add a little salt. When boiling, turn the heat to low until chicken is medium. Cover the pot with the lid to make the chicken meat well-done. Then, transfer the meat to the plate and shred it. Afterthat, marinate shredded chicken meat with fish sauce, salt, and ground black pepper. Let the meat cool and prepare other ingredients.
Cut onion into some thin wedges. Next, mix the onion with 2 teaspoons of sugar and 1 teaspoon of rice vinegar or the lime juice. Set it aside for 15 – 20 minutes in order to make the onion less pungent.
Cut the cabbage into thin and long strips and then, rinse well. Drain well in a mesh sieve and mix with 1 teaspoon of salt. Set it aside for 10 minutes. Noticeably, the cabbage is sometimes quite hard so before mixing with a little salt, you need to submerge it in the hot water and put under the running cold water.
Use a peeler to peel carrot and cut into thin matchsticks. Wash all kinds of herbs (laske leaves, mint, cilantro,…), Remove stems and finely chop. Remove seeds from chilli and slice it.
Recipe to make mixing sauce for salad: Squeeze a lemon for juice. Mix sugar with lemon juice and stir well in a bowl. Then, add fish sauce until you it is tad salty. Finally, add chilli slices and stir well.
Put shredded chicken, cabbage strips, carrot matchsticks and onion wedges into a bowl. Mix with the sauce. Add herbs and ground black pepper on the top. Then, stir well.
Transfer the mixture to the plate. Sprinkle fried shallot and crushed fried peanut on the top.
