Ingredients

  • Minced pork shoulder (besides, you can add minced shrimp)

  • Mushroom, wood ear mushroom, onion

  • Pepper, lemon, sugar, eggs

  • Carrot, kohlrabi, bean sprouts

  • Condiments: cilantro, spring onion, lettuce leaves

  • Rice vinegar, garlic, shallot, chilli

  • Fish sauce, seasoning powder, salt

  • Cellophane noodles

  • Spring roll wrappers

How to make Vietnamese fried spring rolls

Preparation

  • Merge cellophane noodles in the cold water and then cut it lengthwise in 1 – 2cm

  • Wash mushrooms, wood ear mushrooms and onion. Next, cut them into small matchsticks and mince finely

  • Crush shallot and garlic and then, mince them.

  • After rinsing carrot and kohlrabi well, cut them into thin and small matchsticks

  • Wash all condiments (cilantro, spring onion) and finely chop them.

  • Mix all minced ingredients into a large bowl. Add fish sauce, salt, seasoning powder, pepper into the bowl. After breaking the eggs, stir well in order to make the filling more sticky, a little wet and easy to roll.

How to roll

  • Firstly, soak the rice paper in the mixture of water and rice vinegar.

  • Secondly, put the filling in the middle of rice paper.

  • Thirdly, fold sides in and roll the wrapper tightly to enclose the filling.

  • Finally, after rolling, put all spring rolls in the plate and set it aside for frying

How to fry rolls

  • Before frying, you can put the rolls in the fridge for 15 – 20 minutes to make them dry. When frying, the rolls will be more crispy.

  • Pour cooking oil in the pan and heat the oil.

  • When the oil is extremely hot, pick the spring rolls into the pan to fry.

  • When frying, you can add a little lime juice to make the spring rolls more tasty and flavorful.

  • Turn the rolls occasionally and continue to fry until the rolls are golden brown. Then, pick them out to put in the oil absorbent papers to remove the excess oil. Transfer the fried rolls to the plate.

Making dipping sauce with fish sauce

  • You will make the dipping sauce with the ratio: 1 teaspoon of sugar, ½ teaspoon of rice vinegar, ½ teaspoon of lemon juice, 1 teaspoon of fish sauce and 3 or 4 teaspoons of water.

  • Slice chilli and crush garlic

  • When putting all essential spices into a bowl, add sliced chilli and crushed garlic. Then, stir well.

Add garlic and chilli into lime juice or rice vinegar before adding the fish sauce. In doing so, the garlic and chilli will float on the surface.

Before soaking the spring roll wrappers in the water, you can mix a teaspoon of rice vinegar and a teaspoon of sugar in the water to make them more chewy.
