Ingredients for Vietnamese salad with cassava and shrimp

  • Shrimp: 100 grams
  • Pork bacon: 100 grams
  • Cassava: 50 grams
  • 1 cucumber, 1 bell chilli
  • ½ carrot, ½ onion, fresh ginger
  • Lime, garlic, chilli and coriander
  • Spices: sugar,rice vinegar, salt, olive oil and seasoning powder
  • Fried peanuts

How to make Vietnamese salad with cassava and shrimp

Step 1:

+ Peel cucumber, wash to cut in halves and remove the seeds. Then, cut lengthwise in 3 – 4cm. Next, slice into thin slices as the picture below. Add ¼ teaspoon of salt and stir well. Set it aside for 1 hour.

+ Cut the carrot and bell chilli into the thin and long matchsticks and add some salt to set it aside for 1 hour.

+ Peel fresh ginger, wash it and scrape.

Step 2: Peel the onion and cut it in halves. Next, slice it before soaking in the cold water and rice vinegar for 2 hours to make it less pungent. Otherwise, you can submerge the onion in the hot water and transfer to the bowl of cold water with some ices to make it crunchier.

Step 3: Steam or bring the shrimps to a boil and then, slice them. Bring the pork bacon to a boil with some salt and slice it.

Step 4: Soak the cassava in the cold water to make it softer or submerge in the hot water and drain well in the mesh sieve. Crush the fried peanuts.

Step 5: Mix the cassava with 1 spoon of olive oil.

Step 6: Make the mixing sauce: squeeze 1 lime into the bowl for juice, add 2 spoons of sugar, ½ teaspoon of seasoning powder, 1 spoon of fish sauce and minced garlic and chilli. The sauce needs to be sweet and sour.

Step 7: Squeeze cucumber, carrot and onion to remove the water. Add shrimp and pork bacon slices. When making, you should drain all ingredients so that we can use the mixing sauce.

Step 8: Mix all ingredients with ½ mixing sauce and set it aside for 30 minutes. When serving is ready, you put more cassava and add the rest of mixing sauce. Stir well and sprinkle the finely chopped coriander. Before eating, you can put in the fridge for 30 minutes.
