Ingredients for crispy fish with sweet and sour tamarind sauce

  • Kingfish: 500 (about 3 thick fillets)
  • Ripen tamarind: 50 grams
  • Shallot and garlic: 50 grams (more garlic)
  • 2 paprika
  • Laska leaves: 50 grams
  • Spring onion, cilantro: 50 grams
  • Lettuce: 100 grams
  • Spices: Salt, cooking oil, seasoning powder, sugar, black pepper, chilli powder

Ingredient preparation

  • Kingfish: Rinse well in mixture of water and salt and drain well in a mesh sieve
  • Ripen tamarind: Soak in the warm water for 15 minutes and use hand to squeeze well. Leach for the juice and remove the seeds.
  • Shallot and garlic: Rinse well and mince
  • Paprika: Wash and remove stalks. Slice it lengthwise
  • Lettuce: Wash, split the leaves and drain well in a mesh sieve
  • Spring onion and laska leaves: Remove stems to wash and finely chop
  • Cilantro: Remove stems to wash and cut it lengthwise in 3cm

How to cook the fried kingfish with sweet and sour tamarind sauce

  • Pour enough cooking oil into the pan and heat it. When the oil is extremely hot, put the kingfish fillets into the pan to fry. Turn the heat to low to make crispy fish. Turn two sides occasionally. When it turns golden brown, pick the fillets to the oil absorbing paper on the plate.
  • Use another pan (You can use the pan frying the kingfish fillets but you should pour the excess oil in a bowl and add a few drops of lime juice to deodorize the fishy smell) to stir fry 2 spoons of cooking oil with 2 teaspoons of minced garlic and shallot and a little chilli powder to make the dish more attractive.

  • Add tamarind juice, 1 teaspoon of salt, ½ teaspoon of seasoning powder, ½ teaspoon of fish sauce, ½ teaspoon of sugar, ½ teaspoon of black pepper and chilli slices in a sauce to bring a boil for 3 minutes and then, put the fried kingfish into the sauce. Turn the heat to low to simmer.
  • Until the tamarind sauce is gelatinous around the kingfish fillets, you add spring onion, laska leaves and a little black pepper before turning off the heat.
  • Decorate the plate with lettuce leaves and place the kingfish fillets in the middle and finally, sprinkle cilantro on the top to make the dish more attractive and eye catchy.
