In daily meals of many families, braised dishes with the tad salty taste are not indispensable. There are many braised dishes cooked from different ingredients with various ways. What the cookers need is knowing how to choose the ingredients that both have reasonable price and ensure aroma as well as necessary nutrients. To meet these requirements, we will introduce to you “ca kho” recipe (braised fish recipe) at home.

Ingredients for braised horse mackerel

  • Horse mackerel: 500 grams

  • Pineapple: 400 grams

  • Fresh coconut juice: 300ml

  • 5 chilli

  • 1 fresh ginger

  • Shallot and garlic: 50 grams

  • Cilantro: 30 grams

  • Spices: salt, fish sauce, seasoning powder, black pepper, chilli powder

Ingredient preparation

  • Shallot and garlic: wash and mince

  • Chilli: slice lengthwise

  • Horse mackerel:

+ Rinse well under the running water, remove the fish intestine and fins. Next, cut it in half.

+ Marinate with 3 teaspoons of salt for 2 hours

+ Put the fish into the mesh sieve. Then, alternatively pour the hot water and cold one from 2 – 3 times to give the fish a firmer texture when braising.

+ Marinate the fish with 1 teaspoon of minced garlic, 2 teaspoons of fish sauce, 1 teaspoon of seasoning powder, 1 teaspoon of salt, ½ teaspoon of sugar, ½ teaspoon of black pepper, sliced chilli and 1 spoon of cooking oil for 40 minutes.

  • Pineapple: Peel and cut in half and slice into small pieces

  • Ginger: Peel, wash and cut into long and thin matchsticks

  • Cilantro: Remove stems, rinse well and cut lengthwise in 3cm

How to cook

  • Add 3 spoons of water, 2 spoons of sugar in the large pot and stir well. Turn the heat to low until sugar completely dissolves and gets gelatinous. When its color turns golden brown, turn off the heat.

  • Put pineapple pieces and ginger matchsticks in the bottom of the pot. Next, place the marinated fish fillets. Finally, put a layer of pineapple pieces on the top.

  • Pour the fresh coconut juice over the surface. Taste for ½ teaspoon of salt, ½ teaspoon of fish sauce, ½ teaspoon of seasoning powder and ½ teaspoon of black pepper.

  • Pour the cooking oil into a pan and bring it to a boil. Then, stir fry 1 teaspoon of minced garlic with a little chilli powder. Ladle over the surface evenly.

  • Turn the heat to low to braise for 45 – 60 minutes. When the water in the pot is left about 1/3, turn of the heat.

  • Strain the fish fillets into a plate. Place some pineapple pieces and sliced chilli on the top. Decorate with the cilantro to make the dish more attractive.

Requirement for the dish

  • Braised horse mackerel is flavorful with eye catchy decoration

  • The fish fillets are soft, tad salty and aromatic

  • You should eat this dish with steamed rice when it is still hot
