Fresh spring rolls with shrimp – World’s delicious dish
Fresh spring roll with shrimp is one of the world’s most delicious dishes. It is simple to make fresh spring rolls with shrimp for family on the weekend.
In 2011, fresh spring rolls are ranked in “50 world’s most delicious dishes” (according to the tourism page of CNN). Also, it is the second favorite dish in Vietnam, just after “pho” (Vietnamese noodle soup).
Fresh spring roll with shrimp is one of the most long-standing and typical spring rolls in Hanoi although it is now gradually fell into oblivion. Its ingredients are very simple, including pork meat, shrimp, rice vermicelli, lettuce, cilantro, oregano and spring onions. It can be eaten with sweet and sour fish sauce to make it more perfect.
Maybe it is regarded as one of the most “easily-eaten” dishes in Vietnamese cuisine because we can eat it as the appetizer or the main course. With Vietnamese fish sauce, fresh spring rolls become the indispensable dish in the menu of Vietnamese restaurants in the West. French people call it “Rouleaux de Printemps” – the rolls of the spring. This name might come from the interesting colors of the fresh spring rolls.
This dish is very attractive, nutrious and good for our health but simple to make with readily available ingredients. Let’s make this tasty dish on the weekend!
Ingredients for 4 people:
- Shrimp: 300 grams
- Bacon: 300 grams
- Rice vermicelli: 600 grams
- 1 cucumber
- 1 carot
- Herbs: 150 grams
- Lettuce: 200 grams
- Oregano: 150 grams
- Sprout: 200 grams
- 50 rice paper wrappers
- Ingredients for sweet and sour fish sauce recipe: 100ml of fish sauce, 300 grams of pineapple,1 garlic clove, 3 chilli, sugar, 1 lemon, spices
How to make:
Shrimps: Wash, steam with a little salta until done and then leave them cool. Afterthat, peel and leave the heads out and keep tails intact, slice them in half lengthwise
Bacon: Wash, boil and take it out to put into a bowl of water and ices
Cucumber: Wash, cut into halves, remove core, slice lengthways 5cm.
Carrot: Wash, peel, cut into matchsticks, mix with a little sugar and then squeeze well. In doing so, carrot will not be pungent.
Herbs: Pick and wash them, use a sieve or colander to drain well and classify them.
Make the rolls: Immerse rice paper wrapper in a bowl of water with vinegar to soften it. Next, place it on the surface of the cutting board or plate. Place lettuce, herbs, rice vermicelli, carrot, sprouts and shrimp on the rice paper wrapper and then, roll it. Due to its softness, you need to gently roll it.
How to make sweet and sour fish sauce:
Pineapple: Wash, peel, slit eyes, mince and mix with 2 teaspoons of sugar in 10 minutes to take out its water
Lemon: Squeeze to get juice
Garlic, chilli: Wash and mince with 2 teaspoons of sugar
Put the mixture of garlic, chilli and sugar into a bowl and pour the lemon juice. Then, you give the pineapple soaked with sugar, 100ml of fish sauce and 1 tablespoon of spices into the bowl. Finally, stir well to get the tasty sweet and sour fish sauce to enjoy fresh spring rolls with shrimp.
