Ingredients

  • Catfish (or queue de lotte): 1kg

  • 1 teaspoon of turmeric powder

  • 1 spoon of shrimp paste

  • 1 galangal

  • Peanut

  • Black pepper, seasoning powder, sugar, fish sauce

  • Fermented cold rice (compulsory)

  • Condiments: dill, spring onion, shallot, garlic,lettuce, ginger, chilli, lime

  • Pancake

How to make

  • Rinse the catfish under the running water inside and outside. Next, bone it to get meat and then, cut into the square pieces in 3cm. (With the lotte fish, there is only one bone frame in the middle line).

  • Peel the galangal. After slicing, mince it.

  • Wash dill and remove stems. Next finely chop the half and cut the half lengthwise in 4 – 5cm.

  • Marinate the catfish: Minced galangal, dill, turmeric powder, cooking oil, black pepper, seasoning powder and 2 teaspoons of fermented cold rice. Set it aside.

  • If you want to make the marinated catfish more delicious, you should put in the fridge for 24 hours. Next day, rinse well.

  • Fry peanut

  • Peel the ginger and slice it. Actually, Cha ca Thang Long (Thang Long grilled fish) will not eat with ginger.

  • Wash spring onion. Next, use a knife to separate the spring onion into 2 parts: white part and green part. Slice the white parts in half lengthwise. Cut the green parts lengthwise in 4 – 5cm.

  • Peel shallot and garlic. Afterthat, slice the shallot and garlic.

  • Slice the chilli

  • Place the catfish in the grilled grate. The catfish will be more flavorful and tasty if it is grilled on the charcoal grill.

  • Place the cut dill and spring onion on the plate

  • While grilling, turn occasionally. When the catfish is golden brown, pick the grilled catfish pieces out and put on the dill and spring onion arranged on the plate.

  • Stir fry the shallot to create the aroma. When the shallot is golden brown, use the mesh sieve to ladle over the grilled catfish and pour the fried shallot oil on the top.

With this delicious dish, you can eat with rice vermicelli (pancake or rice), fried peanuts, lettuce, ginger, garlic, shallot, chilli. Specifically, you need to make dipping sauce for it. There are two types of dipping sauce, depending on your taste. The first sauce is fish sauce with chilli and lime juice. The second one is shrimp paste mixing with sugar, lime juice and chilli. You should eat when it is still hot.
