Ingredients for braised pok pok wings with red vinegar:

  • Fresh chicken wings
  • Tapioca starch
  • Red vinegar
  • Onion
  • Spices: garlic, salt, cooking oil, sugar, black pepper

How to braise the Vietnamese chicken wings with red vinegar:

  • Peel the onion and slice it
  • Wash the pok pok wings and cut into the bit size pieces
  • Boil a sauce of water and submerge the wings. Transfer to a mesh sieve to drain well
  • Marinate the pok pok wings with sugar, salt and black pepper. Stir well and set it aside for 2 – 3 hours. While marinating, you should cut some lines on the surface of wings

  • Roll the wings over a thin layer of tapioca starch

  • Heat the cooking oil in a pan and put the pok pok wings into the pan to deep fry. Turn occasionally and until two sides turn golden brown, pick them out to the plate

  • Stir fry the minced garlic and shallot. Put the chicken wings into the pan to continue frying. Add a little red vinegar and soy sauce (or fish sauce), sugar, boiling water to cook for 15 – 20 minutes
  • Until the water is gelatinous, add onion to stir well

Remove from heat and ladle the pok pok wings to the plate. Enjoy with the hot steamed rice
